1/4 c PEANUT BUTTER
IN A MEDIUM BOWL, COMBINE EGG BEATERS, SUGAR, MILK AND PEANUT BUTTER. MIX
UNTIL SMOOTH AND CREAMY. ADD BAKING MIX AND BLEND WELL. SPOON BATTER INTO
GREASED MUFFIN CUPS, FILLING EACH 1/2 TO 2/3 FULL. TOP EACH MUFFIN WITH A
LITTLE JELLY (1/2 TEASPOONFUL). BAKE AT 375 DEG F. FOR 15 TO 20 MINUTES OR
UNTIL GOLDEN BROWN. SERVE WARM. THE JELLY OR JAM USED SINKS TO THE CENTER
