1 c Peanut butter
3/4 c Raisins
1/4 c Honey
1/4 c Carob powder
1/2 ts Vanilla
1 c Peanuts -- finely chopped
(Wheat, egg and dairy free)
Combine peanut butter, raisins, honey, carob and vanilla. Mix and
form into a dough. Pinch off clumps (about 1/4 cup), and form into
rolls 6 inches long and about 1 inch in diameter. Roll in chopped
peanuts. Chill, then cut into slices about 1/4-inch thick.
VARIATIONS: Instead of peanuts, roll in coconut, chopped sunflower
seeds or chopped nuts.
