1 c Pearl Tapioca Grated rind of a lemon
1 c Milk Juice of 1/2 lemon
3 c Milk 2/3 c Sugar
1 ds Salt 5 Egg whites
5 Egg yolks Cinnamon, opt'l
Soak overnight, refrigerated the tapioca in one cup of milk. In a
double boiler add the tapioca mixture, 3 more cups of milk and a dash
of salt and cook 3 hours. Cool. Preheat oven to 325. Beat and add in
the yolks, lemon rind and juice and sugar. Increase sugar to 3/4 cup
or more if desired. Beat until stiff the egg whites and fold in. Put
mixture in a baking dish and bake for 20 min. Serve hot or cold with
a sprinkling of cinnamon or a fruit sauce, stewed fruit and/or
