1 lb Butter
3 x Egg yolks
1 lb Butter, fresh
3/4 c Water
2 tb Lemon juice
1 x Jam or jelly
Divide flour. Beat eggs well and add, together with lemon juice and
water to 1/2 of the flour. Knead until smooth and blistery, about 20
min.. Roll out on well floured board to about 1/8" thick. Work butter
into remaining flour until mixture forms a ball. Spread this mixture
on rolled dough until it is all covered. Then fold three times as you
would a handkerchief. Place in wax paper and refrigerate for 2 hours.
Remove and repeat above process. Refrigerate for one hour, and then
repeat again until dough has been rolled four times. Roll dough thin,
cut into squares, about 3 inches in size, fill with jam, jelly or nut
filling. Fold in a triangle, sealing edges well, place on a baking
sheet and bake about 7-8 min. at 400 deg. Reduce heat to 350 deg and
