2 1/2 tb Flour, all-purpose 1 tb Orange peel; grated
1 ts Chili powder 1 c Orange juice
1/2 ts Salt 1 ts Sugar
2 lb Fryer; cut into pieces 1 Orange; sectioned
3 tb Butter (or marg.); melted
Combine flour, chili powder, and salt; dredge chicken pieces,
reserving remaining flour mixture. Brown chicken in melted butter
over medium heat.
Remove chicken from skillet; stir in remaining flour mixture, orange
peel, orange juice, and sugar. Return chicken to skillet; cover.
Simmer 45 minutes or untl chicken is tender. Remove cover; add
orange sections and heat 5 minutes.
