1 Reserved Peking Chicken
5 Scallions, white part only
-thinly sliced
1/2 Red bell pepper -- sliced
2 c Reserved Stir Fried Broccoli
-with Garlic
1 tb Honey
3 tb Rice vinegar
1 1/2 tb Dark sesame oil
1 1/2 tb Soy sauce, low sodium
3/4 ts Hot pepper sauce
1 1/2 tb Peanut oil
Cut the reserved chicken into 1" chunks. You should have about 5
cups. Place in a microwave dish, cover with plastic, and warm in
microwave at full power for 2 minutes. Meanwhile toss the scallions,
bell pepper and reserved broccoli in a large salad bowl. Mix the
honey , vinegar, sesame oil, soy sauce, hot pepper sauce, and peanut
oil in a small bowl. Toss the chicken and vegetables with the
dressing and serve.
