2 tablespoons olive oil1/4 cup chopped tasso - (about 2 oz)1/4 cup chopped shallots2 garlic cloves, minced2 cups peeled, 1/2" diced sweet potatoes1 cup light broth or water1 cup heavy cream2 cups milk2 tablespoons flour1 pound crabmeat3 tablespoons chopped chivessaltfreshly-ground black pepper
In a large soup pot over medium heat, heat the oil. Add the tassoand cook, stirring for 1 minute. Add the shallots and cook for 3minutes. Add the garlic, sweet potatoes, and water and bring toa boil. Cover and cook for 15 minutes or until the potatoes aretender. In a medium bowl, whisk together the cream, milk, andflour. Add to the soup and cook until the mixture begins to thicken.Add the crabmeat and the chives. Season with the salt and pepperto taste. This recipe yields 4 entree portions, or 6 to 8 sideportions.
