4 tablespoons butter
1/2 cup flour
1 1/4 cups milk
5 tablespoons grated plain chocolate
3 eggs, separated
1 egg white
1/4 cup sugar
Confectioner's or powdered sugar
Preheat oven to 375°F.
Melt the butter in a pan and stir in the flour. Remove from the heat and stir in the milk. Return to heat and bring to a boil, stirring. Cook gently for 2 minutes, stirring all the time. Remove from the heat and stir in the chocolate and egg yolks.
Beat the egg whites until stiff. Beat in the sugar a little at a time. Fold the chocolate sauce into the egg whites.
Pour the mixture into a greased 2 1/4 pint soufflé dish. Bake for about 35 to 40 minutes until well risen and firm.
