1 clove garlic
1/2 cup fresh orange juice (about 2 large oranges)
5 tablespoons liquid honey
2 1/2 tablespoons brown sugar
1/2 tablespoon soy sauce
2 pounds pork spare ribs
Peel and crush garlic and mix with orange juice, honey, sugar, and soy sauce in a shallow casserole or baking dish. Place spare ribs in sauce, baste well, cover and leave to marinate overnight.
Preheat oven to 400 degrees. Bake spare ribs, covered, in centre of oven for 1 hour. Uncover and bake a further 15 to 20 minutes, or until sauce on spare ribs has a rich golden color, basting occasionally. Serve with rice.
