4 Chicken breasts, skinned, 1 ts Lemon pepper seasoning
-boned 1/2 ts Oregano
1 c Bread crumbs 1/2 ts Dried basil
1 c Corn flakes, crushed 4 tb Butter, melted
1/4 c Parmesan cheese 1/2 c Egg beaters
1/2 ts Salt 1/4 c Milk
Spray a 3 quart baking dish with no-stick spray. Drizzle 2 tb melted
butter around bottom of dish. Mix bread crumbs, corn flakes, cheese, basil
salt, lemon pepper and oregano in a bowl. Mix egg and milk together. Pound
chicken breasts to flatten slightly (should be about one half inch thick.
Dip chicken breasts in egg mixture and then in bread crumbs. Press chicken
into crumbs to coat well. Place chicken breasts in baking dish and drizzle
with remaining butter. Bake at 375 deg f for 25 to 30 minutes. Makes 4
servings.
Note 1:: This recipe works well with Pork cutlets also. The only thing
needed is to adjust the seasonings to suit your own taste.
Note 2:: If made with egg beaters egg substitute, this recipe is very low
in calories from fat and also low in cholesterol.
