2 tb Vegetable oil
1 md Onion, minced
2 ts Grated fresh ginger root
3 Garlic cloves, minced
6 Whole cloves
1/4 ts Cayenne pepper
1 1/2 lb Fresh spinach, washe
-removed, and choppe
4 tb Plain whole-milk yog
1/4 ts Salt
Freshly ground peppe
Heat the oil in a large suacepan. Add the onion, and fry for 3
minute Add the ginger root and garlic, and continue to cook,
stirring, for 2 mintues more. Add the cloves and cayenne and mix
well. Stir in the spinach. Add the yogurt, one tablespoon at a time,
blending well befo adding the next one. Reduce heat to low, cover,
and cook for 2 minute Sprinkle with salt and pepper, mix, and serve.
