2 lb Round steak -- cut in cubes
1/4 c Cooking oil
2 tb Minced onion
1/2 lb Halved dried apricots
1/2 c Raisins
1/4 c Pine nuts (Pignolias)
Chopped fresh parsley
Sauce
1 tb Margarine
1 tb Flour
1 c Cold milk
3 - 4 T tomato paste
Salt and pepper to taste
Steak: saute the onions and steak cubes in the coking oil until they
are lightly browned on all sides. Stir in the apricots, add a small
amount of water to prevent sticking, coverthe pan and cook over low
heat 20-30 minutes until the meat is tender.
Sauce: melt the margarine, quickly stir in the flour until the
mixture is paste like and immediately add the milk, stirring
constantly. Over medium heat, stir the mixture until it thickens,
then stir inthe tomato paste and cook over low heat for a few min
