1 c Onion, minced 1/2 c Minced green onion
1 1/2 c Celery, minced 3 cl Garlic, minced
3/16 bn Parsley, chopped 1/2 lb Oleo
2 tb Flour 1 c Milk
1 c Dry white wine 1/2 c Chopped boiled shrimp
1/2 c Lump crabmeat 2 1/2 c Bread crumbs
Salt pepper, to taste 6 ea Flounders
18 ea Peeled, boiled shrimp
Saute onion, shallots, celery, garlic and parsley in oleo. Add
flour and blend well. Gradually stir in milk and wine, cooking until
thickened.
Add chopped shrimp and crabmeat and thicken further with bread
crumbs. Season to taste. Split each flounder and fill with this
dressing. Top each with 3 whole shrimp. Place under broiler abt. 20
min. or until fish is cooked through.
