1 tb Shortening 1 ts Salt
8 c Shredded red cabbage 1 md Apples -- or 2 chopped
1 md Onion -- chopped 1/4 c Red currants -- jelly
1/2 c Lemon juice -- or vinegar Lemon slices -- optional
1/4 c Sugar
In a dutch oven melt shortening. add the cabbage, onion, lemon juice
or vinegar, sugar and salt; mix well. Cover and cook over medium heat
for 10 to 15 min. or until cabbage is crisp-tender, stirring
occasionally. Add apples; cook 10 to 15 min. more or until cabbage
and apples are tender. Stir in jelly until melted. Garnish with lemon
slices if desired. Yield: 8 to 10 servings.
