1/4 c Peanut butter
1/2 ts Cumin
1/2 ts Salt
2 cl Garlic
2 tb Lemon juice
3 tb ;hot water
1 ts Sesame oil
2 1/2 c Yellow split peas; cooked
Fresh parsley
Peanuts; optional
Black olives; optional
Most Hummus recipes start with Garbanzo beans; this variation uses
yellow split peas and a little peanut butter.
Combine peanut butter, cumin, salt and garlic. Add lemon juice, hot
water and sesame oil; mix thoroughly. Puree the split peas; add
peanut butter and mix. Garnish with parsley and optionally chopped
peanuts or sliced black olives. Serve with Pita bread and fresh
vegetables for dipping.
