Skinned
Salt -- to taste
White pepper -- to taste
1/4 c Dry white wine
1 tb Lemon juice
1/4 c Chopped sorrel leaves
1 tb Unsalted butter
PLACE SHAD IN A MEDIUM saute pan and sprinkle with salt and pepper.
Add the wine and lemon juice and sprinkle the pan with sorrel. Cover
and place over medium heat for 8 minutes. Remove the shad from the
