1/3 c Oil 1/2 ts White pepper
2 c Fresh siced okra 2 c Water
1 lb Shrimp, peeled and deveined 1 c Canned tomatoes
1/2 c Chopped scallions 2 Whole bay leaves
3 Cloves garlic, minced 6 Drops tabasco sauce
1 1/2 ts Salt 1 1/2 c Cooked rice
1) Heat oil in a large frying pan. Add okra and cook over medium heat
for 10 minutes, stirring occasionally. Add shrimp, garlic, scallions,
salt and pepper; simmer for 5 minutes.
2) Add water, tomatoes, and bay leaves to frying pan; cover and
simmer for 20 minutes. Remove bay leaves; stir in tabasco sauce.
3) To serve, place generous scoop of rice in each of 6 bowls. Spoon
gumbo on top of rice.
