Makes 6 servings

1 c Rice, cooked and cooled 2 ea Thick slices smoked deli
1/2 c Low fat yogurt -turkey breast, cut into
1/4 c Mayonnaise -strips
1 1/2 ts Dried tarragon 1 c Frozen peas, thawed
1 ts Dijon mustard 1 sm Tomato, chopped
1/2 ts Pepper 1 sm Sweet yellow pepper,
1/2 ts Sugar -chopped and seeded
Salt to taste 4 ea Green onions
In small bowl, whisk together the mayonnaise, yogurt, tarragon, pepper
salt, mustard and sugar. In salad bowl, toss together the rice,
turkey, peas, tomato, peppers and onions. Drizzle dressing over top,
and toss gently to coat. Chill until thoroughly cool. Origin: Uncle
