1/2 c Sliced green onions -3/4 cup
1 t Minced fresh garlic 1 1/2 c Flour
2 T Vegetable oil 1/2 c Uncooked quick rolled oat
1/2 c Chopped fresh mushrooms 1/2 c Shredded provolone cheese
1 c Orange juice 2 T Dark brown sugar
1 ea Beaten egg 2 t Baking powder
4 oz Chopped smoked turkey about 1/4 t Salt
Preheat oven to 425 degrees. Prepare 12 cup muffin pan by spraying
each cup lightly with vegetable cooking spray. Saute green onion and
garlic in oil until soft about 2 minutes. Add mushrooms and cook
until soft, about 1 1/2 minutes. Cool slightly; do not drain. Combine
orange juice and egg in large mixing bowl. Stir in turkey, vegetables
and any remaining oil. Combine flour, rolled oats, cheese, sugar,
baking powder and salt. Pour liquid ingredients all at once into dry
ingredients; stir just until moistened. Do not overmix. Divide the
batter evenly into prepared muffin pan, about 1/ 4 cup batter in each
muffin cup. Bake at 425 degrees for 20-25 minutes or until golden
brown. Remove to cooling rack immediately and cool thoroughly.
Refrigerate until ready to serve.
