2 Center Cut Pork Loin
Chops (1" Thick)
1 tb Vegetable Oil
1 lg Onion, Sliced
1 ts Dried thyme, crumbled
1/2 c Canned chicken broth
Season the pork with salt and pepper. Heat the oil in a medium
skillet over high heat. Cook the pork until brown (about 3 minutes
per side). Transfer to the plate. Add the onion to the skillet.
Reduce heat to medium. Cover. Cook, stirring occasionally, until soft
and beginning to brown (about 7 minutes). Stir in the thyme. Cook 30
seconds. Return the pork and any juices which have drained from it to
the skillet. Spoon the onions over. Add the broth. Bring to a boil.
Reduce heat to low. Cover. Simmer until pork is cooked through (about
10 minutes). Transfer pork and onions to serving plates. Simmer sauce
until slightly reduced (about 2 minutes). Spoon over pork. From: Joel
