Spee-Dee Popcorn Bisque

Cooking Time: 1 hour
Standing Time: 1 hour
Serves: 6
1/2 pound unpopped, bulk Spee-Dee Pop! 1/2 cup onion, finely chopped
3 ribs celery, finely chopped 3 cans chicken broth, undiluted 6 cups
whole milk 1 bunch cilantro, chopped 1 large, red bell pepper, finely
chopped 1 cup popped popcorn for garnish (optional)
Combine unpopped popcorn, onion, celery, chicken broth and 2 cups
water in a large, heavy pot. Bring to a boil, reduce to simmer, cover
loosely and simmer 30 minutes. Remove pot from heat and let stand 1
hour or until corn begins to absorb the liquid. Process in food
processor or blender 30 seconds. Return mixture to the pot, add milk
and simmer 30 more minutes, stirring frequently. Take care that milk
doesn't burn.
Strain the soup, pressing as much of the solids through as possible.
Season with salt and pepper; divide among six bowls and garnish with
cilantro, red pepper and popped popcorn.
Note:
The unpopped kernels will not get real soft or pop up; they should be
discarded after you have strained the soup.
