5 c Chicken 1/2 lg Cucumber -- sliced
Cubed cooked (about 3 whole 3 ea Green onions -- with tops
Breasts) Sliced
2 c Green grape halves lg Spinach leaves, optional
1 c Snow peas Orange slices, optional
2 c Spinach -- packed torn DRESSING:
2 1/2 c Celery -- sliced 1/2 c Vegetable oil
7 oz Corkscrew pasta 1/4 c Sugar
Or elbow macaroni, cooked 2 tb White wine vinegar
And drained 1 ts Salt
1 Jar marinated artichoke 1/2 ts Dried minced onion
Hearts 1 ts Lemon juice
(6 ounces) , drained and 2 tb Fresh parsley -- minced
Quartered
In a large bowl, combine chicken, grapes, peas, spinach, celety,
pasta, artichoke hearts, cucumber and green onions. Cover and
refrigerate. Combine all dressing ingredients in a jar or small bowl;
mix well and refrigerate. Just before serving, pour dressing over
salad and toss. If desired, serve on a spinach leaf and garnish with
oranges. Yield: 8-10 servings.
