1 cn DEL MONTE Pineapple Chunks 4 Half boneless chicken
-In Its Own Juice, undrained -breasts, skinned, cooked
2 t Vegetable oil -and cubed (from
1 lg Red or green pepper, cut -MEDITERRANEAN CHICKEN)
-into strips 3/4 c Sweet and sour sauce
1 cn DEL MONTE Cut Green Beans, 1/2 t Crushed red pepper flakes
-drained (8 oz) 4 c Cooked rice
Prep time: 5 minutes. Cook time: 5 minutes.
1. Drain pineapple, reserving 1/3 cup juice.
2. In large skillet, heat oil over medium-high heat. Add pepper
strips; stir-fry 2 minutes.
3. Add green beans, chicken, sweet and sour sauce, red pepper flakes,
pineapple, and reserved juice; stir-fry 3 minutes or until heated
through.
4. Meanwhile, place rice in microwavable dish; sprinkle with 2
teaspoons water. Cover with plastic wrap; slit to vent. Microwave on
HIGH 4 minutes or until heated through. Spoon onto serving plate; top
with chicken mixture.
