12 oz Cooked sweet potatoes, 1/4 c Water
Peeled -- sliced lengthwise 6 ts Sugar
Into thin slices 1/8 ts Ground ginger
2 sm Sweet apples, peeled, halved 1/4 ts Ground cinnamon
Cut into thin 1/8 ts Ground nutmeg
Slices 1 tb Plus
1/4 c Frozen orange juice 1 ts Margarine
Concentrate -- thawed
Preheat oven to 350. Arrange alternate slices of sweet potato and
apple in a baking dish that has been sprayed with a nonstick cooking
spray. Combine orange juice, water, sugar and spices. Pour mixture
evenly over potatoes and apples. Dot with margarine, and bake
uncovered 1 hour.
