1 lb Mild bulk pork sausage 1 ds Ground cumin
1 1/2 tb Chili powder 1 ds Ground oregano
1 cl Garlic; minced Garnish: parsley sprigs
Combine first 5 ingredients, mixing well. Shape the patties. Cook
in a skillet over medium heat until browned, turning once. Drain
well. Garnish, if desired.
Note: to prepare chorizo ahead of time, cook patties until browned;
drain. Cover and refrigerate up to two days. Place on a baking sheet,
and bake at 300 degrees 10 minutes or until hot.
