When William Orr, the husband of Kay Orr, Nebraska's former governor,
was on the show, he selected this beef recipe, one of the governor's
favorite, from his book, The First Gentleman's Cookbook. William
authored the cookbook to raise funds for the Governor's Mansion
Restoration Project. 1-1/2 lbs ground beef 1/2 cup chopped onion 1/3
cup crushed Ritz crackers 5 tbsp barbecue sauce or ketchup 1 large
egg 2 tsp grated horseradish 2 tsp Dijon style mustard 3 slices
American cheese, for garnish Sliced, stuffed olives, for garnish
Preheat the oven to 325F. Lightly oil an 8x4 inch loaf pan. Place
all of the ingredeints except the cheese and the olives in a large
bowl. "Squish" the ingredients together with your hands and pat the
mixtuer into the prepared pan. Bake for 60-75 minutes, or until
completely cooked. Top the loaf with the cheese and olive slices is
desired. Return the meatloaf to the oven and bake for 1-2 minutes
longer, or until the cheese is melted. Origin: Cooking with Regis and
