Quick Pickled Onions
1-1/2 pounds ground turkey
1/4 cup finely chopped green onions (or
2 to
3 medium)
2 tablespoons chopped fresh or
2 teaspoons dried basil leaves
1 tablespoon finely chopped
gingerroot
1/2 teaspoon salt
1/8 teaspoon ground red pepper
(cayenne)
2 cloves garlic, finely chopped
QUICK PICKLED ONIONS
1 cup thinly sliced red onion
1/2 cup red wine vinegar
1/4 teaspoon ground coriander
Prepare Quick Pickled Onions. Spray 12-inch skillet with nonstick cooking spray. Mix remaining ingredients. Shape into 6 patties. Cook patties in skillet over medium heat 7 minutes on one side; turn. Reduce heat to medium-low. Cook 5 to 6 minutes longer or until golden brown and no longer pink in centers. Serve with onions. 6 servings

Mix all ingredients. Cover and refrigerate.
