6 turkey breast slices, 1/4 inch
thick (about
1-1/2 pounds)
1/4 cup apple juice
3 cups broccoli flowerets
1 cup finely chopped red bell pepper
(about
1 medium)
1 cup thinly sliced onion (about
1/2 medium)
1/2 cup apple juice
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons finely chopped fresh
chives
Heat oven to 350 degrees. Spray square pan, 9 X 9 X 2 inches, with nonstick cooking spray. Place turkey breast slices in pan. Pour 1/4 cup apple juice over turkey. Cover with aluminum foil and bake about 20 minutes or until juices of turkey run clear.
Meanwhile, cook remaining ingredients except chives in 12-inch skillet over medium heat 8 to 12 minutes, stirring occasionally, until broccoli is tender and liquid has evaporated. Stir in chives. Serve over turkey. Sprinkle with lemon pepper if desired. 6 servings
