2 c Old-fashioned oats 1 c Unsweetened flaked coconut
1/3 c Apple juice concentrate 1 ea Vanilla bean
-- thawed -- split seeds removed
2 tb Light brown sugar 1 c Dried sour cherries
1 tb Ground cinnamon 1 c Golden raisins
Preheat the oven to 300F. In a large bowl, place the first four
ingredients, and toss well. Spread the granola onto a large cookie
sheet and bake for 25 minutes, stirring occasionally. Stir in the
coconut and vanilla seeds, and bake for another 20 to 25 minutes,
until lightly browned. Stir in the cherries and raisins. Cool and
store in an airtight container for up to 1 month.
