1 c Small broccoli florets 1 ts Salt
2 tb Olive oil 1/2 ts Basil
1 c Eggplant -- diced 1/4 ts Pepper
1 tb Olive oil 1/2 c Marinara sauce
1 1/2 c Yellow squash -- diced 2 c Fresh mozzarella; diced --
1 c Snall zucchini -- diced Divided
1/2 c Red onion -- chopped 1 Plum tomato -- diced
Preheat oven to 450~. Cook broccoli in boiling salted water 2 minutes;
drain. Heat olive oil and add eggplant and cook 10 to 12 minutes until
tender. Add 1 tb more oil, squash, zucchini, onion, salt, basil and
pepper. Cook, stirring occasionally, until veggies are tender and
golden, about 8 minutes. Spread sauce over crust. Top with 1 c
cheese, then veggies. Sprinkle 1 more c cheese and tomatoes. Bake 10
minutes. Per Slice: 380 Cal, 21 Gr Fat.
