3 c Chopped Dates 2 c Quick Or Regular Rolled
1 c Water Oats
8 tb Butter, at room temperature 2 c Whole Wheat Flour
3/4 c Packed Brown Sugar 1/2 ts Baking Soda
1 ts Vanilla Extract
* Heat the oven to 325 F.
1. Simmer the dates and water together until they form a thick paste,
about 15 mins. Set aside.
2. In a large bowl, beat together the butter and brown sugar until
fluffy; beat in the vanilla. Add the rolled oats, mix well. Add the
flour and baking soda and combine well, forming a crumb mixture.
3. Lightly grease a 13 x 9 x 2-inch baking pan. Place half the crumb
mixture in the pan and pat down firmly. Spread with the date mixture.
Spread on the remaining crumb mixture, and pat firmly. Bake for 25 to
30 mins, until lightly browned. Cool on a rack and cut into bars.
