Extra-virgin olive oil 6 tb (To 8 T) Basil Pesto,
1 ts (To 2 t) Sambal oelek -(See World Cafe's Basil
-(chili paste) -Pesto recipe)
1 lb Skinless, boneless chicken 1/2 c Chopped cilantro
Breast, cubed 1/2 c Grated Parmesan cheese
12 oz Bow-tie pasta
Heat olive oil and chili paste in large skillet. Add chicken and cook
until golden brown. Cook pasta in boiling, salted water according to
package directions until al dente. Drain. Place chicken mixture in
bowl. Add basil pesto, cilantro and cheese. Add cooked pasta and
toss lightly but thoroughly. Serve with additional Parmesan cheese
if desired.
